Apple-ricotta pie



Base:
180g..... Cookies
60g..... Butter

Filling:
5..... Middle sized apple (sweet or sour, your own choice)
360g..... Ricotta
2..... Eggs
3tbsp..... Runny honey
1tbsp..... Powdered sugar
2tsp..... Cinnamon
1tsp..... Cardamom
1dl +0,5dl ..... Mango puré

* Crush the cookies and mix them with the butter. Press the mixture into pie tin and bake the base for 7minutes
* Peel and cut the apples into 0,5cm slices. Place the slices into tin. Pour 1dl of mango puré onto apples
* Mix ricotta, honey, sugar and spices, add eggs and pour the mixture over the mango puré and apples.
* Use the rest of the puré for the decoration
* Bake in 180° until the filling has set

Rice with Crab





Serves 4

3,5dl ..... Rice
200g ..... Crab noodles 
0.5 dl ..... Soya sauce
2 ..... Eggs

* Boil the rice in salted water
* Mix the crab noodles into boiled rice
* Add soya sauce and 2 raw eggs. Mix well
* Keep the saucepan on a low temperature to cook the egg
* Serve with oven-baked veggies


Salmon with Wasabi



2... Salmon fillets
1tsp..... Wasabi powder
0.5 dl..... Mayo
Sesame seeds
Chives

To serve:
3dl ..... Rice
Salt
You can also add some broccoli

* Boil the rice in salted water
* Mix wasabi powder with mayo and spread it over the fillets
* Sprinkle on some sesame seeds
* Bake in 190 C about 25minutes



Cinnamon foam



400g..... Ricotta
200ml ..... Whipped cream
2 tbsp ..... Powdered sugar
1tsp ..... Vanilla sugar
3 tbsp ..... Runny honey + extra for decoration
Cinnamon on your taste
Crushed cookies
Chocolate sticks
Lady finger cookies ( or some other cookies) 

* Firstly whip the ricotta until it is foamy
* Add sugars, honey and cinnamon, mix well
* Whip the cream and spoon it into mixture
* Sprinke crushed cookies into serving bowl, the divide the mixture between each
* Drizzle on some honey and stick in chocolate sticks and a cookie. Let it stay in a fridge for an hour bewfore serving

Christmas cupcakes



2..... Eggs
0,5 dl ..... Sugar
1 tbsp ..... Molasses
50g..... Melted butter
0,5 dl ..... Buttermilk
1,5 tsp ..... Baking soda
2,5 dl ..... Flours
1,5 tsp ..... Gingerbread spice
1 tsp ..... Minced cinnamon
0,5 tsp .... Minced nutmeg
1.... Persimmon

* Preheat oven to 180°C. Peel persimmon and cut it into small pieces then set them aside
* Beat eggs, sugar and molasses into fluffy foam. Measure dry ingredients into another bowl 
* Take the melted butter and stir it into egg-sugar mixture while the food processor is still beating the mix. Then stir in the buttermilk
* Add dry ingredients and mix well
* Divide the dough into molds, then divide the diced persimmon on top of each
* Bake for 15-20 minutes

Filled tomatoes

Easy breakfast :) Takes some time before it is ready but believe me, the taste is worth of waiting!


Tomatoes
Eggs
Spices
Cheese/ham/ what ever you want to add to bring some taste :)

* Wash tomatoes and cut the top of. Take the seeds and out with spoon.
* Beat the egg with spices and pour it into the tomato. Add other ingredients and put
into 200 degree oven. Let it cook until the egg is completely cooked.
