Apple-ricotta pie



Base:
180g..... Cookies
60g..... Butter

Filling:
5..... Middle sized apple (sweet or sour, your own choice)
360g..... Ricotta
2..... Eggs
3tbsp..... Runny honey
1tbsp..... Powdered sugar
2tsp..... Cinnamon
1tsp..... Cardamom
1dl +0,5dl ..... Mango puré

* Crush the cookies and mix them with the butter. Press the mixture into pie tin and bake the base for 7minutes
* Peel and cut the apples into 0,5cm slices. Place the slices into tin. Pour 1dl of mango puré onto apples
* Mix ricotta, honey, sugar and spices, add eggs and pour the mixture over the mango puré and apples.
* Use the rest of the puré for the decoration
* Bake in 180° until the filling has set

Rice with Crab





Serves 4

3,5dl ..... Rice
200g ..... Crab noodles 
0.5 dl ..... Soya sauce
2 ..... Eggs

* Boil the rice in salted water
* Mix the crab noodles into boiled rice
* Add soya sauce and 2 raw eggs. Mix well
* Keep the saucepan on a low temperature to cook the egg
* Serve with oven-baked veggies


Salmon with Wasabi



2... Salmon fillets
1tsp..... Wasabi powder
0.5 dl..... Mayo
Sesame seeds
Chives

To serve:
3dl ..... Rice
Salt
You can also add some broccoli

* Boil the rice in salted water
* Mix wasabi powder with mayo and spread it over the fillets
* Sprinkle on some sesame seeds
* Bake in 190 C about 25minutes



Cinnamon foam



400g..... Ricotta
200ml ..... Whipped cream
2 tbsp ..... Powdered sugar
1tsp ..... Vanilla sugar
3 tbsp ..... Runny honey + extra for decoration
Cinnamon on your taste
Crushed cookies
Chocolate sticks
Lady finger cookies ( or some other cookies) 

* Firstly whip the ricotta until it is foamy
* Add sugars, honey and cinnamon, mix well
* Whip the cream and spoon it into mixture
* Sprinke crushed cookies into serving bowl, the divide the mixture between each
* Drizzle on some honey and stick in chocolate sticks and a cookie. Let it stay in a fridge for an hour bewfore serving

Christmas cupcakes



2..... Eggs
0,5 dl ..... Sugar
1 tbsp ..... Molasses
50g..... Melted butter
0,5 dl ..... Buttermilk
1,5 tsp ..... Baking soda
2,5 dl ..... Flours
1,5 tsp ..... Gingerbread spice
1 tsp ..... Minced cinnamon
0,5 tsp .... Minced nutmeg
1.... Persimmon

* Preheat oven to 180°C. Peel persimmon and cut it into small pieces then set them aside
* Beat eggs, sugar and molasses into fluffy foam. Measure dry ingredients into another bowl 
* Take the melted butter and stir it into egg-sugar mixture while the food processor is still beating the mix. Then stir in the buttermilk
* Add dry ingredients and mix well
* Divide the dough into molds, then divide the diced persimmon on top of each
* Bake for 15-20 minutes

Filled tomatoes

Easy breakfast :) Takes some time before it is ready but believe me, the taste is worth of waiting!


Tomatoes
Eggs
Spices
Cheese/ham/ what ever you want to add to bring some taste :)

* Wash tomatoes and cut the top of. Take the seeds and out with spoon.
* Beat the egg with spices and pour it into the tomato. Add other ingredients and put
into 200 degree oven. Let it cook until the egg is completely cooked.

Mother's Day Cake


First ordered cake for Mother's Day. 3 layered basic cake base, between each layer is curd cheese with strawberries. Cake is covered with whipped cream and vanilla tasted curd cheese, decorated with strawberries and some chocolate decorations. The edge is covered with almond flakes.

"Emale" means "for mother"

Baked omelette




For one:

1..... Egg
1 tsp ..... Flour
0,3 dl ...... Milk
2 slice of ham
Blue-cheese
Paprika
Salt
Pepper
Oregano
... Spices of your own choice...

* Preheat oven to 180 C degree
* Beat the egg with milk and flour
* Add spices
* Dice the paprika and blue-cheese
* Pour half of the egg-milk mixture into mold, now put the ham into mold and pour the rest of the mixture on top of the ham
* Add paprika and blue-cheese
* Bake in oven until the omelette is clotted

Cheese & Paprika cookies



3 dl ..... Flour
0,70 g ...... Butter
0,5 tsp ..... Salt
Grated cheese
Chopped paprika
Oregano

* Sift the flour into a bowl, add salt and oregano. You can also add some other spices if you want, chili powder gives grate extra flavor!
* Add chopped paprika and grated cheese, both as much as you want, it's all about you!
* Add cold butter into the mix by small pieces and mix it into the dough. Knead dough until it is all well mixed together. Then place the dough into fridge for 15 minutes
* Roll out the dough (floured table!) until it is ~ 0,4 cm thick. Then cut out the pieces of your own choice
* Bake in 200 C 4-6 minutes. Keep your eye on the cookies while they are in oven! Baking time depends on your oven! The cookies have to be golden brown! DO NOT BAKE THEM TOO LONG because the cheese might change its taste to tangy


Cranberry truffles



200g ..... Cream cheese ( I used Cranberry Creme Bonjour, but if it is not available in your shops then use natural cream cheese, in this case you also need dried cranberries ~ 100g)
Crushed gingerbread 
Cinnamon
100g .....Dark chocolate 
Cream
Coconut flakes

* Add cinnamon and crushed gingerbread into the cream cheese mix. You need to add gingerbread as much as it needs that you can form the mix.
* Form small balls from the mix, place them on the plate which is covered with baking paper. When you have formed all the balls, put the plate into the fridge for 2 hours
* Before you take the cream cheese balls out from fridge, start to melt the chocolate: 

take a casserole and a heat-resistant bowl which is bigger than the casserole. Put water into casserole and start to boil it. Put the chocolate into the bowl and place the bowl on top of the casserole - when the chocolate starts to melt, low the temperature and stir carefully the chocolate. Add a bit of cream into chocolate and stir again - carefully as always. Firstly it might look that the chocolate gets lumpy but while you stir it, it will get back to normal. Then add the cream as much as it needs to get the chocolate smooth and runny

* Now take out the cream cheese balls and start to dip then into the chocolate one by one with a toothpick of smaller fork. After dipping it into chocolate, roll it in a coconut flakes and place it back to the plate.
* When you are done, place the plate back into fridge and keep the truffles in there until you serve them.

Paella with chicken


Oh gosh.. Again.... I keep updating my other food blog but somehow I never manage to translate the recipes... From now on, I promise, that when I've added something to my other food blog I translate it to here right away no matter what !


3 ....Cloves of garlic
2 dl ..... White rice
300g .....  Crushed tomatoes
5 dl ..... Chicken broth
300g ..... Chicken fillet strips
130g ..... Corn (canned/frozen)
130g ..... Peas (canned/frozen)
130g ..... Red paprika (sliced)
Olive oil (not extra virgin 'cause it is not intended to be used on heat treatment!!)
Paprika powder
Chicken spices
Paella spices
Salt
Pepper

* Chop the garlic and fry them quickly with oil on a large sauce pan
* Add raw rice, crushed tomatoes, spices and chicken broth. Allow to simmer
* Fry the chicken fillet strips on another sauce pan.
* When the rice is almost cooked, add corn, peas, paprika and chicken fillet stripes into the rice mix. Mix all together and let it simmer until the rice is completely cooked.
* Enjoy your delicious Spanish meal!

Cheese cake with Carrot




Bottom:
2dl..... Flour
0,75 dl ..... Oil
2 tblsp..... Honey
½ tsp..... Vanilla sugar

(- You can also use digestive cookies and oil)

Filling:
370 g..... Cream cheese
1...... Medium-sized carrot
Juice of ½ lime
1½ tblsp ..... Honey
1.... Egg
0,5 dl......flour

* Mix together the ingredients of the bottom and cover the pie tin with it. Bake in 160° C for 10 min
* Wash, peel and grate the carrot. Mix together the cream cheese, honey, lime juice and egg. Add the grated carrot and flour
* Take the bottom from the oven and pour the cream cheese mixture into pie tin. Bake until the filling is clotted







Pie with Beetroot and Herring

It's been a while.. I am very sorry.. But this pie will make your day! The ingredients do sound weird... But believe me, I hate beetroot but I LOVE THIS PIE !!!!



Dough:
2 dl..... Flour
0,7-1dl.... Oil
2 tblsp..... Water
A bit of salt

Filling:
Marinated and sliced beetroot
Carrots
Herring
2dl.... Milk or cooking cream ( I used the cream)
2.... Eggs
Salt
Spices of your own choice

* For the dough mix together all the ingredients. Cover the pie tin with the dough and bake in the oven for 10min in 200° C
* Wash, peel and slice the carrots, fry them a bit
* Mix together milk/cream and eggs. Add spices
* Take the bottom out from the oven. Cover the bottom of the pie with herring, then add carrots and then beetroots. Last, pour on the cream. Bake in oven until the filling is completely clotted.

Sugar paste Hello Kitty / Plum cake


My first sugar paste figure !



I guess that it came out pretty well for the first time. Yes the ears are bit too... big for her but... I LOVE THE BOW!!! 



Then I made some plum cake. The dough is the basic dough made from: flour, salt, sugar, hand warm water mixed with yeast, butter and eggs.

The filling is quark mixed with plum jam

Cupcake-mania



Blueberry-lingo berry cupcakes with white chocolate
Blueberry cupcakes with dark chocolate

You need:
makes 12-15
2 .... Eggs
4 dl ..... Flours
1 dl ..... Oil
1 dl ..... Sugar
5 tblsp ..... Vanilla yoghurt
1½ tsp ..... Baking powder
1 tsp ...... Vanilla sugar
½ dl ..... Milk or coffee
Cinnamon

* Preheat the oven to 200°C
* Foam eggs with sugar, add oil and foam a bit more
* Add flours where you have mixed the baking powder and vanilla sugar, mix 
* Add yoghurt and liquid, add a bit cinnamon and mix until the dough is smooth  
* Put the cupcake papers into the cupcake tin and lift one big tablespoonful of dough into each hole. Now add whatever you want to put inside;berries chocolate, fruits...
* Add another spoonful of dough, let there be about 1 cm between the edge of the pie tin and the dough
* Put into oven and bake about 20-30minutes

Small blueberry-cappuccino minicakes

When there is nothing better to do and some blueberries need to be used so I can buy new ones ... and my new cake mold also needed to be test-baked so...




3dl ..... Flours
1 .....  Egg
0,75 dl ..... Oil
1,5 dl ..... Coffee ( I used instant cappuccino)
1 tblsp ...... Coconut flakes
2 tsp .... Baking powder
1 tsp ..... Vanilla sugar
3 tblsp...... Sugar
3 dl ..... Blueberries

* Preheat the oven to 225°C
* Mix egg, sugars and oil together
* Add coffee (mix the powder with water), mix carefully and then pour in the bowl
* Add flours and baking powder, also coconut flakes
* Add blueberries, mix
* Pour the dough into cake mold and put into oven for 15-20 minutes

1 cup of cold water
Sugar 

* Wash and peel kiwis
* Cut them into pieces and put them into can and smash with blender
* Add sugar and water, mix once more, pour into glasses and serve

Honey Cappuccino


1/3 cup of strong coffee (or if you have a special machine for cappuccino, then do as you have to)
Hot, foamed milk
Honey

* Make the coffee
* Before you start to foam the milk, add 1-2 tsp of honey into milk. If you don't have foamer, then heat the milk until its boiling spot and use blender to foam it
* Pour the coffee into mug and then pour the honeymilk on it
