Christmas cupcakes



2..... Eggs
0,5 dl ..... Sugar
1 tbsp ..... Molasses
50g..... Melted butter
0,5 dl ..... Buttermilk
1,5 tsp ..... Baking soda
2,5 dl ..... Flours
1,5 tsp ..... Gingerbread spice
1 tsp ..... Minced cinnamon
0,5 tsp .... Minced nutmeg
1.... Persimmon

* Preheat oven to 180°C. Peel persimmon and cut it into small pieces then set them aside
* Beat eggs, sugar and molasses into fluffy foam. Measure dry ingredients into another bowl 
* Take the melted butter and stir it into egg-sugar mixture while the food processor is still beating the mix. Then stir in the buttermilk
* Add dry ingredients and mix well
* Divide the dough into molds, then divide the diced persimmon on top of each
* Bake for 15-20 minutes

Blueberry-lingo berry cupcakes with white chocolate
Blueberry cupcakes with dark chocolate

You need:
makes 12-15
2 .... Eggs
4 dl ..... Flours
1 dl ..... Oil
1 dl ..... Sugar
5 tblsp ..... Vanilla yoghurt
1½ tsp ..... Baking powder
1 tsp ...... Vanilla sugar
½ dl ..... Milk or coffee
Cinnamon

* Preheat the oven to 200°C
* Foam eggs with sugar, add oil and foam a bit more
* Add flours where you have mixed the baking powder and vanilla sugar, mix 
* Add yoghurt and liquid, add a bit cinnamon and mix until the dough is smooth  
* Put the cupcake papers into the cupcake tin and lift one big tablespoonful of dough into each hole. Now add whatever you want to put inside;berries chocolate, fruits...
* Add another spoonful of dough, let there be about 1 cm between the edge of the pie tin and the dough
* Put into oven and bake about 20-30minutes

Banana Cupcakes


Dough:

1 cup..... Oil
½ cup..... Sugar
3 cup..... Flour
1 tsp..... Baking powder
2..... Eggs
1 cup..... Milk
4..... Banana

*Preheat oven to 180 degree
* Wash and peel the bananas. Crush them with fork or hand blender
* Mix together all the dry ingredients
* Whisk eggs in a bowl and add other ingredients, also crushed bananas
* Divide the dough to cupcake tin (use cupcake papers or grease tin with oil/butter)
* Bake about 20 minutes

Strawberry cupcakes


Dough:
I wrote the basic cupcake dough recipe in the Cocoa-coconut flake cupcakes. I use that cupcake dough recipe in every cupcakes that I do.
But add strawberries as much as you want but of course you can use different berries.
Oven: 225°C
Time: ~30minutes

Cocoa-cocounut flake cupcakes


Dough:
0,75dl ..... oil
1,5dl ..... sugar
0,25dl ..... milk
2 ...... eggs
3dl ..... flour
2tsp ..... baking powder
5 tblsp ..... cocoa (I used real cocoa, not that one that is used for a hot chocolate)
½dl ..... cocounut flakes

*Take out a bowl and mix oil,sugar, milk and eggs
* Add 2tsp of baking powder, 5tblsp of cocoa and ½dl of cocounut flakes to 3dl of flour and mix
* Add flour to the bowl and mix
* Take out a cupcake casserole and put the cupcake papers to casserole
* Spill dough to the cupcake papers and put the casserole to the oven

Oven: 225°C
Time: ~30minutes (they might be ready after 15 minutes too, but always keep things in oven longer than it's said in the recipe.
