Apple-ricotta pie



Base:
180g..... Cookies
60g..... Butter

Filling:
5..... Middle sized apple (sweet or sour, your own choice)
360g..... Ricotta
2..... Eggs
3tbsp..... Runny honey
1tbsp..... Powdered sugar
2tsp..... Cinnamon
1tsp..... Cardamom
1dl +0,5dl ..... Mango puré

* Crush the cookies and mix them with the butter. Press the mixture into pie tin and bake the base for 7minutes
* Peel and cut the apples into 0,5cm slices. Place the slices into tin. Pour 1dl of mango puré onto apples
* Mix ricotta, honey, sugar and spices, add eggs and pour the mixture over the mango puré and apples.
* Use the rest of the puré for the decoration
* Bake in 180° until the filling has set

Kiwi juice

3-4 kiwi
1 cup of cold water
Sugar 

* Wash and peel kiwis
* Cut them into pieces and put them into can and smash with blender
* Add sugar and water, mix once more, pour into glasses and serve

Citrus Kissel


Firstly, once more I have to apologize that writing new recipes takes so long... Because I also have a part time job, I just don't have time to write... Now I have a completely free weekend so I have some time to write something :)


1 l ..... Lemon or orange juice
1 ...... Big orange
1 ...... Big mandarine (or 2 small one)
3 tbsp ..... Potato flour
Sugar as much as you want

* Pour the juice into the kettle and let it boil, add sugar
* Wash, peel off and slice the fruits, add them into juice
* Mix the potato flour with cold water and carefully pour it into the kettle while mixing the juice all the time. When it is poured, remove the kettle from the stove plate immediately
* Let it cool down a bit and serve

Mango - Orange pie



Dough:

170g..... Butter
1½ cup..... Sugar
1 teaspoon..... Vanilla sugar
4..... Eggs
2 teaspoon..... Baking powder
6-7 cups..... Corn flour
5 cup..... Mashed mango
1..... Big orange

* Whip butter (room temperature) with sugars
* Grate the peel of orange and press out its juice. When the mixture is foamy add the egg yolks one by one (put the egg whites to the other bowl, you need them later) and add the grated orange peel
* Whip until the egg yolks are foamy
* Add the mashed mango and orange juice while mixing slowly
* Mix together flour, baking powder and egg whites
* Beat the egg whites and add the mixture to the dough gently mixing
* Pour the dough into pie tin and bake in the oven for a 45 minutes in 180 degrees

Key Lime Pie


Base:
150-200g..... Cookies
170g..... Butter

Filling:
600g ..... Condensed milk with sugar
300g ..... Natural cream cheese
2 cup.... Lime's juice
7..... Egg yolk

Cover:
200g..... Whipped cream
2..... sheet of gelatin
1 cup.... Sugar
Juice of one lemon or lime
(You can do this also without gelatin but in that case don't use juice of lemon or lime)

*Crush cookies. Melt the butter and mix it together with cookies. Bake in the oven for 8-10 minutes in 175 degree.
* Mix the egg yolks with cream cheese. Add condensed milk and lime juice. Pour the mixture on the baked pie base and put the pie to the oven for a 30 minutes.
* Take the pie from oven and let it cool. Put it to the fridge.
* Put the gelatin in to cold watter to swell for 5 minutes. Heat the juice of fruit and melt the gelatin into it. 
*Whip the cream with sugar. When it's almost whipped, add gelatin slowly while whipping.
* Cover the pie with mixture and let it stand in fridge for a while before serving.
You can also decorate the pie with lemon or lime slices.

Kiwi Cake



We used basic prepared cake base ( 3 layer)
400g..... Cream cheese
400g..... Vanilla curd
A bit sugar (not necessary)
2..... Banana
2..... Kiwi
Juice of beetroot
4..... Sheet of gelatin

* Whip the cream cheese with cottage cheese and pour in the juice of beetroot (!! If you feel like the mixture is too runny, swell the gelatin in cold watter for a 5 minutes and dissolve it to a warm watter. Add it to the cream mixture while whipping)
* Moisten the first layer with some juice or coffee
* Cover it with cream and set some slices of bananas on it
* Put on the next layer and moisten it. Cover it with cream and add again some banana slices. If you want you can also add some jam
* Keep going until you reach the last layer. Moisten it, cover with creme and decorate the cake with slices of kiwis. You can also use for ex. peaches

Plaited bun with gingerbreads + added new buns with different filling !


Dough:
200g ..... melted margarine
1 cup .....warm milk/water
50g..... yeast
4 cup..... flour
1..... egg
sugar
a bit of salt

Filling:
1 small cup.... Yogurt
2 tablespoon..... apple yam (thick)
2 tablespoon..... starch
1 large handful..... crumbed gingerbreads

* Preheat oven to 175-200 degree
* Mix together all the ingredients of filling
* Roll out a rectangular piece of dough (20x40) and place the filling middle of it
* Cut slanted notches to the sides of dough and weave them alternately from both side of the filling to on top of it
* Bake for 20-30 minutes


Plaited bun with yoghurt

2 small cup of yoghurt
2 tablespoon of thicker apple jam
2 tablespoon of starch

Mix together all the ingredients of the filling and bake the rest as it is written above


Plaited bun with cottage cheese and blackcurrants

400g..... Curd
1..... Egg
2 cup..... blackcurrants
2 tablespoon of starch
Sugar
Vanilla sugar

Mix together all the ingredients and bake the rest as it is written above


Plaited bun with cottage cheese, mandarin and walnut

400g..... Curd
Mandarins
Walnuts
1..... Egg
1 cup..... Sour cream or yoghurt
3-4 tbsp..... Semolina
Sugar

*Peel and cut the mandarins
Mix together all the ingredients and bake the rest as it is written above

Fruit Salad


2 Persimmon
3 Apple
1 Pineapple 
1 Galia melon

* Wash and peel all fruits
* Cut them to a fit pieces
* Mix them together in a bowl and serve

Fruit Cake II

I made this cake for our granny's birthday. 



Cake base
*You can use prepared cake base or you can do it by yourself. I used prepeared one

Filling
* Put chocolate mousse and apple jam between each layer

Decoration

4 Mandarin (peel and remove the pieces from each others)
Green and red grapes (wash and cut them)
Red currants
Tomatillos
400g whipped cream 
100g lemon curd (mix together with whipped cream, don't add sugar!)

* Cover the whole cake with whipped crem
* Start putting mandarins, green and red grapes to the edge in turn
* Next put some red currants
* Now again mandarins and grapes in turn
* Decorate the edges of the with the rest of whipped cream
* Put the tomatillos foot of the cake 

+ If you want you can cover the fruits with gelatin so the cake stands longer and better.

Hungarian apple cake


I did a quick yeast dough
200 g margarine (melted)
1 cup milk (hot hand)
50 g yeast
4 cups flour
1 egg
3 tablespoons sugar
Mix together and place the dough in the refrigerator for 30 minutes to rise.

Filling:
 Apples
Raisins
Nuts
Apricots (dried)
Cinnamon
Sugar
2 Tbsp of starch

Peel and slice apples.
Cut the dried apricots into small pieces, add nuts,raisins, apples, seasonings and starch.
Mixed review
Roll the cake batter into a raised circular form of disconnected largest
When you lift the dough in the form should remain high collars
Place rolled dough onto the bottom cover and stripes
Bake at 180-200 degrees for 25-30 minutes

Orange-meringue cake

Meringue:
7 egg whites 
350 g sugar
2 tablespoons of starch 
100 g almonds
1 orange (zest and juice)

Cream:
300 g vanilla curd 
400 g whipping cream 
1 cup sugar
1 pack of cream strengtheners



Ornamental:
oranges, fruits, chocolate, etc.



*Separate the egg whites of yellow
*Whip the egg whites about 10 minutes and a little salt.
When egg white is slightly whipped, add sugar and whip not more than 5 minutes!
*Grate the orange zest and press out the juice
*Crush the almonds between your hands, mix them with orange juice, orange peel and starchand mix them together with the egg white foam
*Divide meringue quantity of two or three equal parts,and bake in oven 150 degrees for 20 minutes (I had more air rotary furnace oven. In ordinary oven for 40 minutes
*Let the meringue cool down,

meringue is a little softer than the one you can buy from shops

*Whip cream with sugar,
When the cream half whipped add strengthen and whip

*Use on part of the meringue as a platform and add whipped cream on it. You can also put some berries or fruits
*Put the second part of the meringue on top of the whipped cream and cover the whole cake with whipped cream
*Decorate the cake as you want by using fruits, berries, chocolate… what ever you want
*For the last, place the cake to the refrigerator for 2 hours

Appel-oat dessert


Ingredients:

3-6..... Apple
3 dl ..... Oat
100g ..... Butter
½ dl ..... Sugar
Cinnamon

* Peel and cut appels to sectors. Put the sector to the buttered pie tin and sprinkle a bit cinnamon and sugar on it
* Melt the butter in a pot. Let it cool down a while and mix it together with sugar and oat.
* Spill the mixture on top of the apples and put it to oven

Oven: 225°
Time: 10-20 minutes

Tip: Serve with vanilla ice cream or whipped cream

Paris Apple Pie


Ingredients
1,5 dl..... Flour
1 dl..... Sugar
1 tablespoon..... Baking powder
0,25 tablespoons..... Salt
1 teaspoon..... Vanilla
3..... Eggs
3 tablespoons..... Oil
1 dl..... Milk
800 g.....Apples
 
Cover
0.75 dl..... Sugar
1.... Egg
50 g..... Butter

 * Preheat oven to 200 degrees
* Mix the flour, sugar, baking powder, salt and vanilla sugar. Add eggs, oil and milk
* Peel apples, remove core and slice. Mix apple slices to the dough and pour it to pie tin
* Bake in oven for 25-40 minutes. Meanwhile prepare the cover: mix sugar, eggs and melted butter and pour on the cake
* Bake for 10 minutes more. Let cool for 10 minutes and serve

Muffin pie


Dough:
I made cupcake dough. You can find the recipe from here. But don't use cocoa or coconut flakes


Decoration:
1..... Big pear
1..... Peach

* Peel the pear and cut it and peach to slices 
* Take out a pie tin. Lubricate it with oil or butter so the pie detached. Pour dough to the pie tin
* Reposition slices on top of the dough and put the pie into the oven
Oven: 200°C
Time: 30 minutes ~ until the pie is ready

TIP: If you are not sure is the pie ready take a toothpick and press it through the dough. If any dough sticks to toothpick, pie isn't ready. If it doesn't then it's ready.

Summer Smoothie


1.... Peach
1..... Apple
60g..... Raspberries
60g..... Redcurrants
1½dl..... Vanilla ice cream
1½dl.... Milk

* Peel apple. Cut apple and peach to the smaller pieces and put them to the jug. Add raspberries and redcurrants
* Mix them with blender and add ice cream. Mix
* For the last pour the milk in and mix well
* Serve

Fruit cake


Cake base
*You can use prepared cake base or you can do it by yourself. I used prepeared one

Filling
* Put chocolate mousse and apple jam between each layer

Decoration
* Cover whole cake with whipped cream
* Cut green and violet grapes and put them to the edge of the cake in turn
* Cut peach and kiwis to slices and put them after the grapes in turn
* After kiwis an peaches put one round violet grapes and middle the circle that they make, cut kiwis and peaches to the small pieces and set them to the middle

If you want you can cover the fruits with gelatin so the cake stands longer and better. If you don't want to then the fruits doesn't stand very long time in the fridge.

Pear cake

Cake base
200g.... butter
4,5 dl.... flour
2 tbsp....sugar
a bit cold water

* Put the cake base to the pie tin and let it be in the oven about 10-15min in the 200°C

Cream
4 dl.... milk
2.... eggs
2 tbsp.... flour or semolina (I put 1 tbsp flour and 1 tbsp semolina)

* Whip eggs with sugar and stir in the sifted flour. 
* Heat milk until it boils and pour in the egg-flour mixture stirring constantly
* Heat the mixture with low heat stirring constantly until it's thicker
* Let the cream cool down

Pears 
* Peel and slice the pears
* Boil water with syrup and add 3 tbsp sugar (or use any fruit  juice you want)
* Boil the pears gently (with low heat) about 5 minutes
* Drain and cool the pears
*Add 2 tbsp gelatine to the hot syrup and mix until gelatine is melted and cooled down

Assembling the cake
* Pour the cream to the bottom of the pie tin and cover it with sliced pears
* For the last pour gently the gelatin over the cake

* Put the cake to the fridge and let it be there until it is curdled

Of course you can use other fruits too. Let your imagination to run.

Yoghurt cake

Yoghurtcake

Cake base
180g.... biscuits
70g.... melted butter

Filling
1 l.... yoghurt (fruit yohgurt or whatever you like)
1 can (530g).... fruit salad (or berries) 
200 ml.... whipped cream
0,5 tbsp.... sugar
1 tsp.... vanilla sugar
2 tbsp.... gelatine
1 cup.... liquid of the fruit salad

* Crush the biscuits and add melted butter within.
* Press the cake base to the pie tin what is covered with wax paper.
* Strain the fruit salad. Put gelatin into the liquid and let it melt. Hold it on a small heat but do not let it boil. Mix it whole time while gelatin is melting.
* Mix whipped cream and sugars. Add yoghurt and fruits/berries and for the last, the liquid with gelatin.
* Mix the filling for the last time before pouring it to the pie tin.
* Cover the cake with cellophane and put the cake into the fridge. Let it stay there over the night before serving it.
* If you want you can decorate the cake with whatever you want before you serve it.
