Small blueberry-cappuccino minicakes

When there is nothing better to do and some blueberries need to be used so I can buy new ones ... and my new cake mold also needed to be test-baked so...




3dl ..... Flours
1 .....  Egg
0,75 dl ..... Oil
1,5 dl ..... Coffee ( I used instant cappuccino)
1 tblsp ...... Coconut flakes
2 tsp .... Baking powder
1 tsp ..... Vanilla sugar
3 tblsp...... Sugar
3 dl ..... Blueberries

* Preheat the oven to 225°C
* Mix egg, sugars and oil together
* Add coffee (mix the powder with water), mix carefully and then pour in the bowl
* Add flours and baking powder, also coconut flakes
* Add blueberries, mix
* Pour the dough into cake mold and put into oven for 15-20 minutes

Kiwi juice

3-4 kiwi
1 cup of cold water
Sugar 

* Wash and peel kiwis
* Cut them into pieces and put them into can and smash with blender
* Add sugar and water, mix once more, pour into glasses and serve

Honey Cappuccino


1/3 cup of strong coffee (or if you have a special machine for cappuccino, then do as you have to)
Hot, foamed milk
Honey

* Make the coffee
* Before you start to foam the milk, add 1-2 tsp of honey into milk. If you don't have foamer, then heat the milk until its boiling spot and use blender to foam it
* Pour the coffee into mug and then pour the honeymilk on it

Flourless Orange Cake


2 oranges
3 eggs
215g caster sugar
300g almond meal or normal flour
1 tsp baking powder

Wash the oranges, place them in a large saucepan and cover with water. Bring to boil and simmer for 15 minutes. Drain, then return to pan, cover with water and bring to boil. Let simmer another 15 minutes. Drain and coarse chop the orange discarding any seeds.

Place the oranges in the bowl of a food processor and process until smooth.
Whisk the eggs and the sugar until thick and pale. Add the orange, almond meal and baking powder and fold until just combined. Pour into a greased, 22cm round pan and bake in 170C for about 50 minutes or until skewer inserted comes out clean.
