Small blueberry-cappuccino minicakes

When there is nothing better to do and some blueberries need to be used so I can buy new ones ... and my new cake mold also needed to be test-baked so...




3dl ..... Flours
1 .....  Egg
0,75 dl ..... Oil
1,5 dl ..... Coffee ( I used instant cappuccino)
1 tblsp ...... Coconut flakes
2 tsp .... Baking powder
1 tsp ..... Vanilla sugar
3 tblsp...... Sugar
3 dl ..... Blueberries

* Preheat the oven to 225°C
* Mix egg, sugars and oil together
* Add coffee (mix the powder with water), mix carefully and then pour in the bowl
* Add flours and baking powder, also coconut flakes
* Add blueberries, mix
* Pour the dough into cake mold and put into oven for 15-20 minutes

Blueberry-cloudberry smoothie


8 cup ..... Natural yoghurt
Blueberries
Cloudberries
Vanilla sugar

* Mix all ingredients together with hand blender and serve

The Queen berry pie


Dough doesn't include eggs. This is the doubled amount of ingredients

Dough:
1 l ..... Buttermilk
4 cup ..... Sugar
14 cup ..... Flour
250g ..... Butter
1,5 tsp ..... Soda
3 tsp ..... Vanilla sugar
On top:
2 l ..... Berries
6 tbsp ..... Sugar
4 tbsp ..... Starch

* Mix together buttermilk, sugar, vanilla sugar, melted butter, flours and soda
* Pour the dough into baking tray which is covered with greaseproof paper
* Mix the berries with sugar and starch and add them on the dough
* Bake in oven about half an hour in 200 degree

Biscuit cake


You need:
4 pack of biscuits
1 cup of coffee
200g Halva
500g Sour cream (20%)
500g Sour cream (10%)
Sour jam
Berries

* Grate halva and mix it together with sour creams
* Set fist layer of biscuits (for ex. 4x5)
* Moisten them with coffee
* Spread on the sour cream mixture and set on the next layer of biscuits and moisten them also with coffee
* Spread on the jam (if there is a lot of liquid in the jam, mix in a bit of starch) 
* Set on another layer of biscuits, moisten them and spread on the sour cream mixture
* Set on as many layer you want, it depends how much you have biscuits
* On the last layer of biscuits, spread on the sour cream mixture.
* If you want, you can do a vertical or horizontal stripes on the mixture by using knife or toothpick 
* Put the cake into fridge for 12 hours
* Decorate cake before serving for ex. with berries

Plaited bun with gingerbreads + added new buns with different filling !


Dough:
200g ..... melted margarine
1 cup .....warm milk/water
50g..... yeast
4 cup..... flour
1..... egg
sugar
a bit of salt

Filling:
1 small cup.... Yogurt
2 tablespoon..... apple yam (thick)
2 tablespoon..... starch
1 large handful..... crumbed gingerbreads

* Preheat oven to 175-200 degree
* Mix together all the ingredients of filling
* Roll out a rectangular piece of dough (20x40) and place the filling middle of it
* Cut slanted notches to the sides of dough and weave them alternately from both side of the filling to on top of it
* Bake for 20-30 minutes


Plaited bun with yoghurt

2 small cup of yoghurt
2 tablespoon of thicker apple jam
2 tablespoon of starch

Mix together all the ingredients of the filling and bake the rest as it is written above


Plaited bun with cottage cheese and blackcurrants

400g..... Curd
1..... Egg
2 cup..... blackcurrants
2 tablespoon of starch
Sugar
Vanilla sugar

Mix together all the ingredients and bake the rest as it is written above


Plaited bun with cottage cheese, mandarin and walnut

400g..... Curd
Mandarins
Walnuts
1..... Egg
1 cup..... Sour cream or yoghurt
3-4 tbsp..... Semolina
Sugar

*Peel and cut the mandarins
Mix together all the ingredients and bake the rest as it is written above

Summer Smoothie


1.... Peach
1..... Apple
60g..... Raspberries
60g..... Redcurrants
1½dl..... Vanilla ice cream
1½dl.... Milk

* Peel apple. Cut apple and peach to the smaller pieces and put them to the jug. Add raspberries and redcurrants
* Mix them with blender and add ice cream. Mix
* For the last pour the milk in and mix well
* Serve

Blueberry pie


Dough:
400g..... Four
2tbs..... Baking powder
250g.... Butter
150g..... Sugar
2..... Eggs

Filling:
500g..... Curd
3..... Eggs
80g..... Sugar
1 l ..... Blueberries
2tblsp..... Potato flour

* Melt butter and let it cool down
* Beat sugar and eggs with mixer and add cooled butter
* Add flour and baking powder and mix until the dough has been steady
* Start to make the filling
* Mix together cottage cheese, sugar and eggs. Mix up and add blueberries and potato flour. Mix well
* Butter the pie tin and press the dough to it. Spill the filling on it and put pie to the oven

Oven: 200°C
Time: 30minutes to 50minutes

Strawberry cupcakes


Dough:
I wrote the basic cupcake dough recipe in the Cocoa-coconut flake cupcakes. I use that cupcake dough recipe in every cupcakes that I do.
But add strawberries as much as you want but of course you can use different berries.
Oven: 225°C
Time: ~30minutes

Strawberry smoothie

You need...

Strawberries
Milk
Vanilla ice cream
Vanilla sugar
Sugar

*Crunch strawberries with hand blender
*Add a pieces of ice cream which are melted a little bit so it's easier to mix with strawberries
* Add milk and sugars. Mix well and serve

- You can also use different berries

Yoghurt cake

Yoghurtcake

Cake base
180g.... biscuits
70g.... melted butter

Filling
1 l.... yoghurt (fruit yohgurt or whatever you like)
1 can (530g).... fruit salad (or berries) 
200 ml.... whipped cream
0,5 tbsp.... sugar
1 tsp.... vanilla sugar
2 tbsp.... gelatine
1 cup.... liquid of the fruit salad

* Crush the biscuits and add melted butter within.
* Press the cake base to the pie tin what is covered with wax paper.
* Strain the fruit salad. Put gelatin into the liquid and let it melt. Hold it on a small heat but do not let it boil. Mix it whole time while gelatin is melting.
* Mix whipped cream and sugars. Add yoghurt and fruits/berries and for the last, the liquid with gelatin.
* Mix the filling for the last time before pouring it to the pie tin.
* Cover the cake with cellophane and put the cake into the fridge. Let it stay there over the night before serving it.
* If you want you can decorate the cake with whatever you want before you serve it.

Berry pie

Berrypie

Dough:
150g.... butter
4 cup.... flour
1 cup.... sugar
cold watter

Filling:
400g.... cold berries
4tbsp.... starch
2-3tbsp.... sugar
a bit cinnamon
1 kg.... curd
1.... egg

* Mix dough ingredients together and add water. Don't let the dough go too wet.
* Mix fillings ingredients together and add berries.
* Cover pie tin with wax paper.
* Put the dough into tin and pour the filling to the tin.
Oven: 170°C
Time: 60 min - until the pie is ready.
