Cheese cake with Carrot




Bottom:
2dl..... Flour
0,75 dl ..... Oil
2 tblsp..... Honey
½ tsp..... Vanilla sugar

(- You can also use digestive cookies and oil)

Filling:
370 g..... Cream cheese
1...... Medium-sized carrot
Juice of ½ lime
1½ tblsp ..... Honey
1.... Egg
0,5 dl......flour

* Mix together the ingredients of the bottom and cover the pie tin with it. Bake in 160° C for 10 min
* Wash, peel and grate the carrot. Mix together the cream cheese, honey, lime juice and egg. Add the grated carrot and flour
* Take the bottom from the oven and pour the cream cheese mixture into pie tin. Bake until the filling is clotted







Pie with Beetroot and Herring

It's been a while.. I am very sorry.. But this pie will make your day! The ingredients do sound weird... But believe me, I hate beetroot but I LOVE THIS PIE !!!!



Dough:
2 dl..... Flour
0,7-1dl.... Oil
2 tblsp..... Water
A bit of salt

Filling:
Marinated and sliced beetroot
Carrots
Herring
2dl.... Milk or cooking cream ( I used the cream)
2.... Eggs
Salt
Spices of your own choice

* For the dough mix together all the ingredients. Cover the pie tin with the dough and bake in the oven for 10min in 200° C
* Wash, peel and slice the carrots, fry them a bit
* Mix together milk/cream and eggs. Add spices
* Take the bottom out from the oven. Cover the bottom of the pie with herring, then add carrots and then beetroots. Last, pour on the cream. Bake in oven until the filling is completely clotted.

Sugar paste Hello Kitty / Plum cake


My first sugar paste figure !



I guess that it came out pretty well for the first time. Yes the ears are bit too... big for her but... I LOVE THE BOW!!! 



Then I made some plum cake. The dough is the basic dough made from: flour, salt, sugar, hand warm water mixed with yeast, butter and eggs.

The filling is quark mixed with plum jam

Cupcake-mania



Blueberry-lingo berry cupcakes with white chocolate
Blueberry cupcakes with dark chocolate

You need:
makes 12-15
2 .... Eggs
4 dl ..... Flours
1 dl ..... Oil
1 dl ..... Sugar
5 tblsp ..... Vanilla yoghurt
1½ tsp ..... Baking powder
1 tsp ...... Vanilla sugar
½ dl ..... Milk or coffee
Cinnamon

* Preheat the oven to 200°C
* Foam eggs with sugar, add oil and foam a bit more
* Add flours where you have mixed the baking powder and vanilla sugar, mix 
* Add yoghurt and liquid, add a bit cinnamon and mix until the dough is smooth  
* Put the cupcake papers into the cupcake tin and lift one big tablespoonful of dough into each hole. Now add whatever you want to put inside;berries chocolate, fruits...
* Add another spoonful of dough, let there be about 1 cm between the edge of the pie tin and the dough
* Put into oven and bake about 20-30minutes

Small blueberry-cappuccino minicakes

When there is nothing better to do and some blueberries need to be used so I can buy new ones ... and my new cake mold also needed to be test-baked so...




3dl ..... Flours
1 .....  Egg
0,75 dl ..... Oil
1,5 dl ..... Coffee ( I used instant cappuccino)
1 tblsp ...... Coconut flakes
2 tsp .... Baking powder
1 tsp ..... Vanilla sugar
3 tblsp...... Sugar
3 dl ..... Blueberries

* Preheat the oven to 225°C
* Mix egg, sugars and oil together
* Add coffee (mix the powder with water), mix carefully and then pour in the bowl
* Add flours and baking powder, also coconut flakes
* Add blueberries, mix
* Pour the dough into cake mold and put into oven for 15-20 minutes
